No Bake Energy Bites
1/2 c peanut butter
1/3 c honey
1 c old fashioned rolled oats
1 c unsweetened coconut
1/4 c flax seed (optional)
1-2 tsp vanilla
pinch of sea salt
1/2 c chopped nuts, seeds, chocolate chips, dried fruit(optional)
Combine all ingredients in a bowl and mix well. Place in fridge for 30 minutes. Pull out and use an ice cream scoop to roll into a compact ball. Keep in fridge and eat within a week. If too sticky try adding a small amount of flour to the mixing bowl.

This is a great recipe which can be modified for many tastes. The peanut butter can be changed to sun nut butter for those who have little ones with peanut allergies. Other options include adding something crunchy to it like the chopped nuts, seeds, or even poppy seeds for a slight change.
